Milk now at the Market
Evansdale Cheese are pleased to present to the Otago Farmers Market our CREAM LINE MILK
This will be sold in 2 litre bottles and will be available as Full Cream and as Trim Milk.
As well they will also have available Cream and Ricotta and Yoghurt.
What they are selling
Cream Line – This is milk that has not been homogenised-- i.e. the fat globules are in suspension within the milk and have not been dissolved into it. We are separating off some of the cream to make this into Trim Line Milk and will sell the cream.
Pasteurised - The milk has all been pasteurised at 64 degrees centigrade for 30 min. This means that the milk had not lost any of its protein as happens with high temperature pasteurisation.
Standardised - As the season progresses the amount of protein and fat will vary within the milk.
The Price of Milk. You will have all read of the high cost of milk. The cost of milk is determined by the international price for dairy products- it is the way the dairy farmer gets paid and therefore it determines the price you pay for the milk, At the present time this is at an all time high and is expected to continue like this for some time.
It could be something that we have to get used to. We may grumble about it but the one thing we do well in NZ is to grow grass and that is the fundamental thing . The world is crying out for protein and dairy products. This demand will continue to grow as countries become richer and more sophisticated as their tastes grow. And so the demand for dairy products will continue to grow- At present we supply about 30% of the worlds dairy export production.
