Equal quantity Sugar
Wipe the fruit to remove fur, place in a roasting dish with water to steam, covered, until tender. Add more water if necessary.
Cool, then sieve to remove the skin, pips and any gritty material.
Measure the Pulp, then place in a large heavy-based saucepan with an equal quantity of Sugar.
Bring to a gentle simmer, stirring continously, until sugar has dissolved. Continue to simmer on very low heat until the paste is very thick.
Line a low 2 Litre container with cling film and spoon in the hot paste. Cover, cool and then store in the refrigerator.
To serve: Cut small slabs from the block of Quince Paste and serve separately, with hot or cold meats, or crackers and cheese.
