Gorgonzola Salad Dressing

20g x Gorgonzola, or other blue cheese
2 tbsp x Chives, chopped
1 tbsp x Red Wine or Tarragon Vinegar
1 tbsp x Walnut Oil
1 tsp x Whole Grain Mustard
1 x Egg
Salt & Pepper

Whisk the vinegar, egg and mustard together, then add the oil slowly, blending well. Then add the crumbled gorgonzola and other remaining ingredients.
Drizzle this dressing over the Pear & Walnut Salad, and serve with BBQ Venison.
