COLESLAW
Ingredients
¼ green cabbage, finely sliced
¼ red cabbage, finely sliced
½ red capsicum, finely sliced
½ green capsicum, finely sliced
1 teaspoon poppy seeds
1 teaspoon sesame seeds
1 spring onion, or a little red or white onion finely sliced
½ cup mayonnaise
Squeeze lemon juice
Salt and cracked pepper

Method
Put the cabbage, capsicum, onions, and seeds in a good size bowl.
Mix your mayonnaise, lemon juice, and seasoning together.
Add to your cabbage and mix well (clean hands are the best) If you like a little more dressing simply add some more mayonnaise. Eat immediately or can be covered and stored in the fridge for 2 days.

I love the crunchy texture and creaminess to a coleslaw. It doesn’t have to be just cabbage, carrots and dressing. Try adding some sliced capsicum, using different types of cabbage, or adding a few poppy seeds, or sesame seeds. They not only add flavour, it makes your coleslaw a more nutritional salad. It is the perfect partner to a baked potato or kumara.
