Mark Crosland of Basecamp Salamis also known as wild salami or the salami man has been selling manuka smoked venison salamis, smoked sausage, hot and cold smoked venison and venison biersticks at the Otago Farmers Market since June 2003 having only missed the first 3 months.

Basecamp manufactures all their salamis and smallgoods from wild venison and are very low in cholesterol compared to other salamis with venison having a quarter to a fifth of the saturated fat of prime beef.

The salamis, biersticks and smoked sausages are hung up above the fire in a traditional smoke-house and cook-smoked to specific temperatures.

The salamis and small goods do not contain gluten or any other meal or bino type products with the salamis being hand-made .

Copied from an old Italian recipe, converting it to modern day ingredients and smoke-cooking the salamis in the old traditional way. This craft form has made Basecamp's salamis unique in their texture and flavour and a real Dunedin favourite.

"I have seen a lot of changes since those early days and am very proud to be a part of something quite special every Saturday morning despite the 5.30am starts on a cold winters morning, but with a hot cup of coffee in hand and some good banter from my fellow stall holders and eager customers the time flies by. I really enjoy meeting people from all over the world with our salamis often traveling back home to countries like Asia, UK, America even Greenland and the South Pole.

I recently helped with the set up of the water filter and drinking fountain in the mobile kitchen which is something I do when not involved with salami sales as I have a water filtration business called Pure Water Central.
