2 x pink lady apples
1 cup walnuts
1 cup red quinoa
1 bunch spinach
2 tbsp finely sliced fresh chives
Maple dressing ingredients:
1 ½ tbsp maple syrup
2 tsp cider vinegar
1 tsp wholegrain mustard
¼ cup olive oil
Juice ½ lemon
Salt & pepper
Preheat the oven to 200 degrees and toast the walnuts for 5-10 minutes. Once cool roughly chop.
Make the maple dressing by mixing together the ingredients and seasoning to taste with salt and pepper.
Cook the quinoa as per instructions on packet and then set aside to cool.
Wash and roughly chop the spinach, slice the apples and cut into matchsticks.
Mix the spinach, apples, walnuts, chives and dressing together with the quinoa. Season to taste with salt and pepper
