Autumn Slaw with Garlic Tahini Dressing

Red Cabbage
Cavolo Nero Kale (stripped off stems)
Handful of pumpkin seeds

Dressing Ingredients:
½ c filtered water
½ c tahini
¼ c apple cider vinegar
2 Tbsp tamari
2 Tbsp lemon juice
1 tsp sea salt
1 clove garlic
1 Tbsp sesame seeds
2/3 c olive oil
1 Tbsp finely chopped parsley


Shred cabbage and kale, toss in a bowl with pumpkin seeds, add dressing and mix well just before serving.

Dressing Method: Combine all ingredients except oil and parsley, blend on high for 30 secs, until smooth. Turn blender down to medium and slowly pour in oil until fully combined, remove from blender and stir in herbs. Can be kept in a refrigerator for approx. 2 weeks.
