4 small apples (Rosedale Orchard) sliced horizontally and cored
2 Tablespoons of maple syrup
2 teaspoons of ground cinnamon
120gm mascapone cheese
1/2 cup of raw walnuts (Rosedale Orchard)
Preheat the oven 180c.
Line eight holes of a 12 hole muffin tray with baking paper.
Place an apple in half & place in each lined muffin hole. Cut side up.
Put maple syrup, cinnamon in a small bowl and add 2 Tablespoons of boiling water mix together. Spoon evenly over top of each apple.
Bake for 45 mins or until the apples are tender. Leave to slightly cool.
Top with mascarpone, walnuts and a wee sprinkle of salt.
