Bircher Muesli served with Spiced Poached Plums

Vegetarian , Breakfast


Plum Ingredients:

6 x plums

3 tbsp honey

2 x star anise

1 cinnamon stick

¼ cup water

Bircher Ingredients:

1 ¼ cups whole rolled oats

2 tsp chia seeds

¼ cup dates

1 ½ cups almond milk

1 grated apple

To serve:

Toasted almonds

Coconut yoghurt


To cook the plums, wash and cut in half and remove the stones. Place the plums in a pot with the cinnamon stick, star anise, honey and water. Bring to the boil and then reduce to a low simmer. Cook until the plums are tender. Set aside to cool, and then refrigerate. To make the bircher, place the rolled oats, chia seeds, dates, almond milk and grated apple in a bowl together and leave to soak overnight. To serve the muesli, place some of the overnight oats in a bowl and top with the poached plums, yoghurt and a sprinkle of chopped toasted almonds.


*you can use cow’s milk and standard yoghurt if you do not want to have as a dairy free option
