Carrot, Mint, Parsley and Currant Salad

6 carrots grated

1 cup fresh mint

1 cup parsley

Generous handful currants

Juice of one lemon

Generous slug of olive oil


A very easy salad to prepare which goes well with any BBQ food. 

Grate the carrots into a bowl. Add the chopped fresh mint and parsley. Add a generous handful of currants. Dress the salad with the juice of a lemon and a generous slug of olive oil.
