Carrot Nut Roast Loaf

Baking , Vegetarian


3-4 Medium Carrots (approx. 400g)
2 cups Cashew Nuts/Seeds, Nut mix
1 medium onion
2 cloves garlic
1tsp paprika
1tsp cumin
1tsp salt


Chop and cook or steam carrots until tender, then mash. Finely chop onions & garlic and saute over medium heat until just tender. Add Nuts or mixture of seeds & nuts into food processer and blitz to a rough crumb. Add all prepared ingredients together with seasoning into a bowl and mix together until fully combined. Press into lined/oiled loaf pan, or shape into loaf shape and put onto lined baking tray.
Cook at 200 degrees celcius for 30 mins, then cool in tin for 10 mins before removing.
