500g boneless/skinless chicken thighs – chopped
1 Tbsp + ½ cup chipotle sauce
1 tsp honey
1 medium onion - sliced
1 red capsicum - sliced
Heat pan to very hot. Toss 1 Tbsp sauce with the chicken pieces to coat. Sear both sides of chicken in hot pan until starts to char. This could be done on a hot-plate or bbq. Remove from pan and set aside. Turn the heat down to medium, add oil, onions & capsicums to pan, toss around to soak up the remaining sauce from the pan. When soft and capsicums are starting to cook through, add honey, water and the rest of the chipotle sauce, add the chicken and stir through to finish cooking and fully coat the chicken before serving.
