Chocolate beetroot brownies

1 cup all-purpose flour
1/4 cup cocoa powder (coKo lounge)
1/4 tsp salt
225 g chopped semi-sweet chocolate
1/2 cup canola oil
3 eggs (Agreeable Nature)
1 cup granulated sugar
2 tsp vanilla
2 cups peeled and grated raw beetroot (Ettrick Gardens)


  1. Whisk flour with cocoa powder and salt in a medium bowl.
  2. Microwave (or in a pot on a low heat element) chocolate in a small bowl until melted, about 1 min. Stir in canola oil until smooth.
  3. Whisk the eggs, sugar and vanilla in a large bowl.
  4. Whisk in the chocolate mixture, then fold in flour mixture and 2 cups grated beetroot until just combined.
  5. Scrape into a lined brownie baking pan.
  6. Bake at 160° until a skewer inserted into the centre comes out just clean, 45 to 50 min.
  7. Cool on a rack before cutting into squares.
