Corn and Bean Salad

Vegetarian

Ingredients

2 corn cobs (cooked and kernels sliced off). (Rosedale Orchard)

1 red onion thinly sliced

Large handful of fresh runner beans (steamed for 5 mins until cooked).  (Terracotta Plants)

2 x 400gm tins of black beans (drained and rinsed in a colander)

Juice of a lemon

500gms tomatoes (Waewae Permaculture)

1 spring onion (Waewae Permaculture)

1 cucumber (Waewae Permaculture)

Bunch of coriander (chopped)

Large slug of olive oil (Dunford Grove)

Salt and pepper

Method

Place all ingredients into a large salad bowl and leave to sit for 10 mins or so to allow the ingredients to macerate together.
