Daikon Noodle Salad

Vegan , Vegetarian , Raw

Ingredients

Half a daikon -spiralize into noodles (Caithness Farm)

1 carrot peeled or spiralized (suggested vendors Ettrick Gardens & Caithness Farm)

1 red chilli deseeded and sliced (Kakanui Produce)

Handful of coriander chopped (Janefield Hydroponics)

Handful of sesame seeds -toasted 

 

Dressing:

1 Tbsp rice wine vinegar

1 Tbsp maple syrup

1 Tbsp sesame seeds

Method

Put all the salad ingredients, except the toasted sesame seeds, into a bowl. 

Then mix the dressing ingredients together and then mix through the salad and leave to sit for 10mins. Before serving, sprinkle the toasted sesame seeds over the salad.
