
Pizza base of your choice
Fresh cherries, stoned and coarsely chopped/ripped apart
Olive oil
Parmesan cheese (not the dried stuff in a can), grated
Kawakawa salami, thinly sliced or cut into small cubes
Fresh basil
Fresh mozzarella, optional
Preheat oven to 220°c. If you are lucky enough to have a pizza stone, then place this in now. A heavy metal oven tray does the same trick, crisping up the base perfectly.
Liberally drizzle your pizza base with olive oil and scatter over the parmesan cheese. Scatter over the cherries and salami. Don’t be too heavy handed with the toppings, sometimes less is more when it comes to creating flavour. Dot with ripped basil leaves and the mozzarella, still using the less is more approach. Place in the oven. Bake until the edges are crispy and golden.
You can be adventurous and make your own base or use a flatbread or wrap as a base, just keep it thin so the topping does all the talking.
