
3 carrots - grated
Half a large swede - grated (Te Mahanga Orchard)
l fennel bulb - sliced very thin (Oamaru Organics)
Micro greens - I used spicy radish mix (Brightside Microgreens)
Dressing
Half cup olive oil
1 tsp mustard
¼ cup apple cider vinegar
Pinch of sugar
Pinch of salt & pepper
Mix dressing ingredients together
Mix all ingredients together in large salad bowl with the dressing.
