Fritter of the Day


Ingredients

This recipe will use what is available from the Market on the day to make healthy bite-sized treats.

 

1-2 eggs (Agreeable Nature)

Fresh black pepper

Sea salt

½ cup cornflour

Fresh herbs -Spring Onions (Janefeild Hydroponics)

Za’atar (Abdal’s)

Mix ingredients in a large bowl and set aside.

 

1.5 cups of seasonal Market produce can be added we used:

Carrots (Ettrick Gardens) 

Broccoli (Oamaru Organics)

Silverbeet (Oamaru Organics)

Garlic (Wae Wae Permaculture) 

 

For cooking

Olive oil (Dunford Grove) or ghee

Method

Method

Pick the produce you are going to use and wash it. Evenly cut all produce (for consistent cooking). Add prepped produce to the base mix and then fold it in. Let this rest for 20 minutes. Heat the oil or ghee in a heavy base fry pan. Create spoon sized balls and then flatten for cooking. Cook small amounts at a time. Dessert spoon sizes are perfect for treats. Serve with your favourite condiments from the market – recommended Tartan Sari Chutneys.
