
1 head of cos lettuce
Olive oil
Salt
Pepper
Dressing Ingredients:
3 Tbsp cider vinegar
4 anchovies
1 egg yolk
2 Tbsp Dijon mustard
1 clove garlic
¾ cup light olive oil
To make the dressing, in a food processor blend together the egg yolk, cider vinegar, anchovies, mustard and garlic. Blend well
With the food processor running slowly drizzle the olive oil in until it is all added and emulsified
To grill the lettuce, cut the cos lettuce in to quarters through the base so it stays together
Heat a pan on a high heat. Once the pan is hot, add a splash of olive oil and place the lettuce in cut side down, once coloured and beginning to wilt turn over and season with some salt and pepper
Continue to cook for 1-2 minutes
Drizzle over some of the anchovy dressing and enjoy as a side dish to your meal
