Healthy Walnut Cookies

Ingredients

1 apple, peeled & seeded (Ettrick Gardens)  

6 Tbsp wildflower honey (Blueskin Bay Honey)

1 Tbsp ground cinnamon

¼ tsp ground cloves 

1 Tbsp baking soda

1 tsp apple cider vinegar

½ tsp vanilla extract

200ml olive oil (Dunford Grove)

110gm walnuts (NZ Nuts)

500gm flour 

Method

Cut the apple into small pieces, add the apple to a pot and cook until soft, add water to cover the apples, simmer for about 15 minutes or until the water evaporates. Place apples in a bowl and add the rest of the ingredients except for the flour and walnuts. In a food processor blend the walnuts until fine. Add the walnuts to the wet mix and then slowly add in the flour. It will feel soft and oily in the hand. Cover the dough and refrigerate for 1 hour. Roll out the dough then Using a cookie cutter, cut out the dough and place on lined baking trays, bake for 8-10 minutes or until the cookies are crisp.
