Honey and Fig bread and butter pudding



350g bread


250g figs

2 tbsp sherry

300ml milk

300ml cream

3 eggs

4 tbsp thyme honey

2 tsp vanilla

½ tsp cinnamon


Pre heat the oven to 160 degrees

Slice the bread in to slices about 2cm thick and butter

In a bowl whisk together the eggs, milk, cream, honey, vanilla, sherry and cinnamon

Slice the figs

Arrange the bread in a deep baking dish scattered with the figs

Pour over the egg mix, allow the bread to soak it up and add more until the egg mix is all in the baking dish

Bake in the oven until the custard is set, approx. 40 minutes

Serve warm with icecream
