Kale, Apple, Celery and Walnut Salad (My Take on Waldorf Salad)



  • 1 bunch of cavolo nero kale – greens removed from the stalk and finely sliced. (Ettrick Gardens)
  • 2 Hetlina Apples – cut into 1cm cubes (Otago Organics)
  • 4 stalks celery – Finely sliced (Oamaru Organics)
  • 1 cup walnuts – cut into pieces
  • juice of 1 lemon
  • ½ cup olive oil (Dunford Grove)
  • 2 Tablespoons Dijon mustard
  • 1 teaspoon each of salt and pepper


  1. Place prepared kale in a serving bowl.
  2. Place the prepared apple, celery, and walnuts on top of the kale.
  3. Prepare the dressing by combining the remaining ingredients in a small jar and shake well.
  4. Pour the dressing over the salad and serve immediately.
  5. Enjoy!
