Kohlrabi Carrot Slaw



1 large kohlrabi stems trimmed and peeled Janefield Hydroponics

1/4 red cabbage shredded

2 good-sized carrots or 4 small ones grated Waewae Permaculture

1/2 red onion finely sliced

4 tablespoons coriander finely chopped Janefield Hydroponics

1/4 cup dates sliced

1/4 cup mayonnaise (your fav whole egg mayo)

1 tablespoon cider vinegar

1 tablespoon sugar

1 teaspoon salt


Combine the kohlrabi, cabbage, carrots, onions, coriander, and dates in a large bowl.

Mix together the mayo, cider vinegar, sugar and salt. Pour over the slaw, and mix until fully coated, chill well before serving.
