
1 large leek (Oamaru Organics)
1 granny smith apple (Willowbrook Orchards)
50g butter
1 tsp fresh thyme
1 Tbsp honey (Blueskin Bay Honey)
Salt & pepper
50g Feta (Whitestone Cheese)
1 sheet of puff pastry
Preheat the oven to 200 degrees C.
Cut the leek into 1 cm rounds and rinse under cold water keeping the leeks in rounds if possible. Wash and finely chop the thyme
Wash and cut the apple into quarters and remove the pips, slice into thin slices
Take a sheet of puff pastry and cut the corners off to make a round, cut 3 slits in the middle so the steam can escape when cooking
Heat a pan on a moderate to high heat and add the butter. Place the leeks in the pan, season with salt and pepper and cook until they are starting to colour nicely and remove from the heat
Add the apple slices on top of the leeks, drizzle over the honey and sprinkle over the chopped thyme
Place the sheet of pastry over the leeks and tuck the pastry down the sides
Cook in the oven for approx. 20mins until the pastry is golden brown and cooked
Leave to cool for 5 minutes before inverting onto a serving plate
Sprinkle over the feta and a little extra thyme to garnish and serve
