Lemony Spring Greens


zest of 1 lemon
1T olive oil
1T butter
1 clove of garlic
500g baby spinach (or finely sliced cabbage etc)


  1. Crush the garlic.
  2. Prepare your greens.
  3. Zest the lemon taking care not to get any white pith.
  4. Heat oil and butter on medium heat, add the garlic and lemon zest cook for 2 minutes.
  5. Add the greens and cook until just wilted.
  6. Serve.


This recipe will work for a variety of greens
