Merlot and Cracked Black Pepper Sausages with Fresh Cherry Salsa

Ingredients

250g fresh cherries
¼ cup flat leaf parsley
1 clove garlic
1 tbsp chives
1 tbsp red wine vinegar
Juice of 1 orange
1 green chilli
Salt
Pepper
Merlot and Cracked Black Pepper Sausages

Method

Destone the cherries and finely dice. Finely slice the parsley and chives. Finely dice the chilli and garlic.
Mix all of the ingredients together and season with salt and pepper to taste. Serve the salsa over the merlot and cracked black pepper sausages from Blue Mountain Butchery.
