Friday is the winter solstice and we can all take heart that the days will start to get a little longer. Usually this also means that winter really starts in earnest!

Matariki – the Maori name for the star cluster known as The Pleiades which has just become visible in our hemisphere – and commonly known as the Maori New Year is also in full swing with many celebrations happening, including the Mid Winter Festival in the octagon this Saturday night.

Personally I am making the most of the cold weather and long nights by cooking up hearty casseroles and calorie laden puddings. We all know that the cold weather uses up more of our energy so if there is ever a time to indulge in steam puddings now is it!

One of our long term, well-loved organic vegetable vendors has under gone a change of ownership. Brydone Growers is no more but has been re-named Oamaru Organics. The new owners feel that this name better reflects who they are. Never fear though they are still growing the certified organic vegetables that we love and Nigel remains the main man at the market and also back at the farm as manager and co-owner. They have plans a plenty so watch this space for more news. It is very heartening to see energy and commitment being put into retaining and growing organic produce in the south. A big congratulations and thanks to all those involved for making this commitment.

This Week in the kitchen

We have Chef Kate back in the kitchen this week dishing up these wonderful rustic recipes she didn't get to the other week. Jamalia Edwards will be joining Kate in the hub.  Pop by and say hi as she will be joining the market team some Saturdays as well from now on.  Hope this gives some culinary inspiration for your mid winter Christmas feasts, Matariki or warming hearty meals for family and friends.

Dunford Grove:

Here's where most of the work on the grove comes together.  Fresh out of the "press", now settling prior to racking.  Then we send samples for certification testing and it's on to blending.

 

Did you know?

I just talked about the oil being pressed, this is a throw back to early extraction.  Then, the olive paste was slathered on coir mats, stacked up then squeezed under some pretty serious pressure.  Now we use a shiny stainless steel decanter, basically a specialized centrifuge.

~Farmers Market Special - Hazelnut, Coffee & Kombucha~

Heidi tried to make coffee kombucha once, and it was a complete failure! It's definitely on the list of things to try again but, in the meantime, we've discovered that infusing coffee beans into a tea-based kombucha imparts a lovely coffee flavour, while retaining all of the freshness and lightness of a traditional tea kombucha. For the special this week, we've also added some Hazelnut and Vanilla extracts to round out the flavour and give a lovely, smooth finish. Available both in bottles and on tap. Recipe on our Facebook and Instagram.

 

~Kombucha on Tap (BYO Bottle)~

This week we will have two different versions of our Reishi Chai kombucha on tap. We're trying to nail down the recipe before we introduce this as a standard flavour, and would really appreciate your feedback. We'll also have Hazelnut, Coffee & Vanilla kombucha available as another option.
