It is going to be a hot start to the weekend, something we will all enjoy! And hopefully the warm weather will hasten the arrival of all the good things, like asparagus and Jersey Bene potatoes, and paeonies. It has been a slow start to the season and all of us are hanging out for Oamaru Organics return and Palmerston Asparagus. Fingers crossed next weekend will see their return but we can’t make any promises, unfortunately.
Marie-Jose Chauvin is a very talented individual. Hailing originally from France she has been involved at the farmers market since 2005, firstly with the very popular and successful La Crepe stall and more recently branching out to create her own stall, Maries, selling a range of fermented vegetables, low sugar jam and fresh tempeh.
Marie has a passion for fermented foods and is quite simply in love with tempeh, a fermented, vegetable protein. Each week she creates a different flavour profile from different beans, cereals and seeds. Tempeh or tempe is a traditional Indonesian soy product, that is made primarily from fermented soybeans. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. This can then be marinated and cooked in various ways.
Marie has been involved in the food business most of her working life. She cares deeply about what she produces and has a passion for sustainability, good gut health and good food, with a healthy twist in general.
Marie supports other market vendors by buying their fruit and vegetables to make her sauerkraut, kimchi, jams and seasonal fermented vegetable range. She sources certified organic produce where she can. She also is a very keen gardener and is able to supplement market produce with her own from time to time.
Marie is very particular about how she produces her products. All her preparation is undertaken at her own registered kitchen and is maintained and recorded to a very high level. She is a keen potter and brings a lovely aesthetic to her stall with her tasting dishes being ones she has created herself.
This week Marie launches her 100% vegan and gluten free tempeh burgers and sweet pancake sandwiches. This is an exciting addition to her previous offerings and allows her to showcase in ready to eats her beloved tempeh amongst other yummy vegan delights.
