Mothers make the world go round! Without them where would we be? If you are fortunate enough to have them around. There are all sorts of ways of showing appreciation to the mothers in our lives and they don’t all involve spending heaps of cash. Personally the most memorable mother’s days I have had are when we spent time together as a family and I had my breakfast cooked for me!!

This year it will no doubt feel very different especially if your mum isn’t in your bubble. Thank goodness for phones and video calls.

Willowbrook Orchard Kitchen Hint for the Week:

Fill your largest pot with peeled, sliced apples of choice.  Add 1/4 depth of pot with water only. No sugar at this point to avoid sticking.

Cook the apples slowly at low temperature, stirring occasionally so apples cook evenly. When cooked and whilst hot stir in your required sugar (sweeter varieties need less).

Most of the water should have evaporated. You don't want your apples too wet. If still too much water, drain off into a jug (refrigerate for an apple juice drink later or to flavour something else, or you can use instead of water when making porridge or add to scones with handful of milk powder mixed in instead of regular milk).

Break down apples evenly with fork or potato masher.  Keeping portion of cooked apple in fridge for desserts (e.g. sponge, pies or crumble) and for breakfast.

Freeze the rest in oven proof bakeware ready to go in a hurry for a quick dessert on busy days.  When needed, fetch apples in their baking tins/dishes out of freezer and just add dessert topping… great for crumbles particularly. Crumble mix goes straight onto frozen or slightly defrosted apples.  Bake.

Freeze some apple mash into ice cubes. Lovely to add in a glass of water or tea :-)
