Peanut Butter Pinto Bean Tempeh

Ingredients

  • ½ cup smooth peanut butter (BAY Road)
  • 2 Tablespoons lemon juice
  • ¼ cup olive oil
  • 1 Tablespoon tamari
  • 2 teaspoons salt
  • 3 tablespoons rice malt syrup
  • ¼ cup chopped coriander
  • ½ teaspoon chilli flakes
  • 500g tempeh (Maries)

Method

  • Combine all of the marinade ingredients in a bowl.
  • Cut tempeh into desired sized pieces and place in the bowl.
  • Refrigerate to marinate for a few hours, or overnight.
  • When ready to cook, preheat the oven to 180 degrees celsius.
  • Line a baking tray and place tempeh pieces in a single layer.
  • Bake in the oven for 20 minutes.
  • Enjoy!
