Potatas Bravas (Crispy Potatoes with Spanish tomato & garlic sauces)

Vegetarian , Sauces / Marinades


Agria Potatoes – pre-cooked & cubed

Red Sauce Ingredients:
2 Tbsp olive oil
1 onion diced
1 clove garlic, finely chopped
Red Jalapeno chillies, chopped (amount to taste)
1 tsp smoked paprika
1 can tomatoes

Garlic Sauce (Aioli) Ingredients:
3-4 garlic cloves
¾ c olive oil
1 egg yolk
Salt & pepper to taste
1 tsp lemon juice


Potato Method: Fry off potato cubes in oil until fully cooked and crispy. Served topped with some of the tomato & garlic sauces.

Tomato Sauce Method: Add all ingredients to a pan and cook over a medium heat until fully combined and cooked through.

Garlic Sauce Method: Crush garlic (traditionally in a mortar & pestle) add yolk and mix, then gradually add the oil to create a thick sauce, add salt to taste and finally the lemon juice. Alternatively this can be done in a food processor, but would be easier with a larger amount, so perhaps a stick blender in its upright jug (both sauces will store in a container in the fridge for approx. 1-2 weeks).
