Raspberry chia seed jam



2 cups fresh or frozen raspberries

3 tbsp chia seed

½ tsp vanilla extract

1 tbsp lemon juice

2 tbsp water

2 tbsp honey


Place the raspberries in a pot with the water and vanilla, bring to the boil and add the honey, chia seeds and lemon juice and continue to cook for a few minutes until it has thickened a little

Place into a sterilised jar and keep in the fridge for up to a 1 week
