Raw Vegetable Salad with Bacon and Miso Dressing

3 snowball turnips

3 golden beetroot

1 carrot

100g cooked bacon

Alfalfa sprouts

Dressing:

1 tbsp chipotle in adobo sauce

1 tbsp white miso

1 tbsp honey

½ cup oil

¼ cup rice wine vinegar

Salt

Pepper

Method

To make the dressing, place the chipotle, miso, rice wine vinegar and honey in a food processor and blend until smooth. With the food processor running, drizzle the oil in until emulsified. Peel the carrot, turnips and beetroot and thinly slice on a mandolin or use the slice function on a food processor. Slice the cooked bacon, and mix together with the sliced vegetables, sprouts and dressing to taste. Season with salt and pepper.
