Carrot Halwa

Ingredients

3 to 4 tablespoons ghee
4 cups grated or spiralled carrot
4 cups milk of your choice
¾ cup sugar (or to taste)
¼ teaspoon cardamom powder
15 to 18 cashew nuts
Ghee to fry cashew nuts
 

Method

Heat ghee in a heavy bottomed frying pan or pot.
Add spiralled carrots and sauté for 5 to 7 minutes. Add the milk and bring it to a boil.
Cook for about 10 to 15 minutes over low flame, stirring at intervals. Cook until the carrots are soft and the milk is evaporated.
Add the sugar and mix well. Cook until it turns thick for about 3 to 4 minutes, stirring at intervals. In a separate pan, fry the cashew nuts in ghee until golden brown and add it to the halwa. Serve warm or chilled
Notes:
Adjust the quantity of sugar according to your taste.
You can also add one pinch saffron along with the milk for better flavour.
