
3 red onion
Salt
Pepper
Olive oil
2 Tbsp balsamic
1 Tbsp honey
1 Tbsp wholegrain mustard
Preheat the oven to 180 degrees
Cut the onion into segments and place in a roasting dish. Lightly oil and season the onions with salt and pepper
Roast in the oven for approx. 20 minutes until the onions are starting to soften
Mix together the mustard, balsamic and honey and drizzle over the onions
Return the onions to the oven for another 10-15 minutes until the glaze is sticky
Enjoy the onions as a side dish to a main meal. They are delicious with roast meats
