Silverbeet & Blueberry Salad



¼ cup pumpkin seeds
½ cup sunflower seeds
½ cup almonds (whole, sliced or slivered)
½ bunch silverbeet (approx. 200g)
100g Goats feta
150g fresh blueberries

Dressing Ingredients:
¼ cup olive oil
3 tbsp balsamic vinegar
1 tsp honey
1 tsp Dijon mustard


Toast the seeds and almonds either in an oven at a moderate temperature or in a pan and then set aside to cool. Wash and pat dry the silverbeet and then remove the stalk (keep the stalk and use in a stir fry). Finely slice the silverbeet leaves and place in a bowl with the seeds, almonds, crumbled feta and blueberries. Make the dressing by mixing everything together in a bowl. Drizzle the dressing over the salad. Taste the salad and season accordingly with salt and pepper.
