Sorrel Pesto

½ cup toasted walnuts
1 bunch sorrel (approx. 100g)
20g grated parmesan
½ cup olive oil
½ tsp sea salt


Place the sorrel, walnuts, parmesan and salt in a blender and turn on. Drizzle in the olive oil and continue to blend until it is a smooth consistency. Enjoy the pesto on a platter with bread and vegetables or as a topping on cooked fish.
