
4 x Eggs for poaching
Broccoli Ingredients:
1 large head broccoli
2 tsp smoked paprika
½ tsp chilli powder (less if you don’t want it too spicy)
2 cloves garlic
Olive oil
Salt and Pepper
Rice:
1 cup brown rice
1 tin black beans, drained and rinsed
Generous handful of coriander roughly chopped
1 lemon
Preheat the oven to 200 degrees. Chop the broccoli in to florets and mix with the smoked paprika, chilli powder, garlic, a drizzle of olive oil and a sprinkle of salt and pepper. Spread the broccoli out in a single layer on a piece of parchment paper on a flat roasting tray and roast for approx. 10-15 minutes, until starting to crisp a little. Cook the brown rice and while still warm toss through the drained/rinsed black beans, lemon juice and roughly chopped coriander. Bring a pot of water up to the boil with a splash of white vinegar and then add the eggs, reduce the heat to simmer and cook the eggs for approx. 2 minutes. Serve the rice and beans with the broccoli and a poached egg.
