Sticky Lamb Ribs



  • 200mls wild game sauce (Wild Larder)
  • 1 whole lamb ribs (Cardrona Merino Lamb)


  1. Place lamb ribs in a container and cover with the sauce. Leave to marinate at least 3 hours, preferably over night.
  2. When you are ready to cook, preheat the oven to 160 degrees celsius.
  3. Remove the ribs from the marinade, leaving some on the meat and setting aside what remains to use for basting as it cooks.
  4. Place ribs in a lined roasting dish and bake for half an hour.
  5. Remove from the oven and using a pastry brush, baste with the leftover wild game sauce. I also like to grab a spoon and spoon over the fat that renders out and sits in the bottom of the roasting dish.
  6. Repeat this process every 15 minutes for the next hour.
  7. Remove from the oven at total cooking time of 1 ½ hours.
  8. Allow to rest for 10-15minutes.
  9. Cut ribs between the bones with a large knife.
  10. Serve alongside paper towels…finger licking good!
