Stir-fried Yams with Spinach

Vegan , Vegetarian


  • 400 - 500gms Yams (Oamaru Organics)
  • 2 Tablespoons coconut oil
  • 3 cloves of garlic - crushed
  • 1 teaspoon each salt and pepper
  • ½ teaspoon cayenne pepper
  • 2 teaspoons paprika
  • 1 bag spinach (Waewae Permaculture)
  • Zest of 1 orange or lemon
  • ½ cup coriander


  1. Cut the yams into matchsticks
  2. Finely slice the spinach
  3. Heat the coconut oil in a fry pan on a medium heat and add the yams, garlic, salt and pepper.
  4. Cook until tender.
  5. Add the cayenne pepper, paprika and spinach and turn off the heat, allowing the residual heat to wilt the spinach.
  6. Add in half of the zest and sliced coriander and stir to combine.
  7. Top with remaining coriander and zest to serve.
  8. Enjoy!
