Summer Apple Cake



5 - 6 Crisp apples, peeled, cored, and cut into small pieces.  Ettrick Gardens apple selection 

½ cup white sugar

2 tablespoons lemon juice

1 tablespoon vanilla

1 cup of dates chopped 

½ teaspoon cinnamon

Sweet shortcrust pastry ready rolled (feel free to make your own)

Preheat oven to 180c.  


In a large bowl, toss together apples, dates, lemon juice, vanilla, and cinnamon. Let the mix steep in the refrigerator while you prepare your pastry. 

Take a springform pan and cut the pastry to line the bottom of the pan, next cut the pastry to line the sides of the pan pressing along the bottom rim to seal.

Take the apple mix out of the refrigerator and drain, then fill the pastry lined pan.

Take the rest of the pastry and cut into strips so you can make a lattice topping by crisscrossing the stripes on the top of the filling.

Then place in your preheated oven and bake for around 1 hour until the pastry is a nice golden brown.
