Swede Fries with Parmesan and Rosemary



  • 1 swede (Caithness Farm)
  • 3 TB olive oil (Dunford Grove)
  • Salt and pepper
  • ½ cup grated parmesan
  • 1x 10cm sprig rosemary
  • 1 clove garlic – crushed


  1. Peel the swede and cut into fries.
  2. Put in a bowl with the oil, salt and pepper, and garlic. Toss to coat the swede.
  3. Bake in a single layer on the baking sheet for 40 minutes, or until cooked and beginning to brown.
  4. Remove the leaves from the stalk of the rosemary, discard the stalk and roughly chop the leaves.
  5. Remove the swede from the oven and top with the parmesan and rosemary.
  6. Return to the oven for 5-10 minutes, until the cheese is melted, and rosemary fragrant.
  7. Wait a few minutes for the parmesan to firm up a bit before breaking them apart and serving them.
