
Base:
1.5 cup flour
½ cup icing sugar
125gm butter
Filling:
500 gm pumpkin – cooked, mashed & cooled
2 eggs
½ cup brown sugar
1/3 cup cream
1tsp cinnamon
½ tsp nutmeg
½ tsp ginger
Topping:
½ cup rolled oats
½ cup coconut
¼ cup brown sugar
¼ cup flour
40gm butter melted
Base: Add ingredients to food processer and blitz until fine crumb and starts to come together.
Press into the base of slice pan. Bake at 160 degrees C for approx 10 mins or until starts to brown.
Filling: Beat eggs & sugar together, add the rest of the ingredients and mix well until smooth and combined, pour over the cooked base. Sprinkle topping over the filling and cook for approx. 20mins or until cooked.
Topping: Add all ingredients to food processer, blitz until forms crumble, press some of it together to form some larger chunks.
