Thyme honey roasted artichokes and parsley root

900g artichokes

200g parsley root

3 tbsp thyme honey

2 cloves garlic

3 tbsp olive oil

1 tbsp fresh thyme




Pre heat the oven to 200 degrees

Scrub the artichokes and the parsley roots to remove all of the dirt, cut into chunks

Finely chop the garlic and mix together the olive oil, honey and finely chopped fresh thyme, toss through the chopped veg and then spread out on a baking tray in a single layer. Season with salt and pepper

Roast in the oven for 20-30 minutes until golden and tender
