Turmeric Potatoes with Lemon, Chillies and Coriander

Ingredients

700gms potatoes 

2 Tablespoons olive oil

3 cloves garlic chopped

1 red chilli finely chopped or 2 teaspoons chilli flakes

2 tsps cumin seeds

2 teaspoons coriander seeds 

1 Tablespoon of ground turmeric 

Juice of 2 squeezed lemons 

Salt and pepper to taste 

Bunch of finely chopped fresh coriander

 

Method

Chop potatoes into bite size chunks (I don't bother to peel them) then boil or steam until tender.  Then drain and mix with the rest of the ingredients. 

Heat olive oil in a heavy based pan and stir in chopped garlic, cumin seeds, red chilli for 2 minutes. Stir in the potatoes coating them in the spices. Add the turmeric and lemon juice and cook for another 2 minutes so the potatoes absorb the colour and flavour. Season with salt and pepper, tip into a serving dish and garnish with the fresh coriander.
