Vegetarian Noodle Salad



Salad Ingredients:
200g rice noodles
1 carrot
1 red capsicum
1 yellow capsicum
½ bunch mint
½ bunch parsley
1 bunch coriander

Dressing Ingredients:
2 tbsp Tamari (or soy sauce)
1/3 cup lime juice
1 tsp chilli flakes
2 cloves garlic finely grated
1 tbsp honey
1 tbsp fresh ginger finely grated


Make the dressing by mixing together all of the ingredients. Cook the rice noodles according to instructions on packet. Finely slice the carrot and capsicums.
Roughly chop the herbs. Mix all of the prepared salad ingredients with the dressing and add salt and pepper to taste if needed.


*If you want to you can add some cooked prawns or chicken to this salad but it is equally delicious as a vegetarian salad.
