Zesty New Potato Salad

Vegan , Vegetarian


½ cup black olives
2 tbsp capers
½ red onion
1 cup flat leaf parsley
750g new potatoes

Dressing Ingredients:
2tbsp white wine vinegar
2 tsp Dijon mustard
½ tsp sumac
1/3 cup olive oil



Wash and cut the potatoes into medallions. Cook the potatoes in salted water until just tender. Drain the water off and then cool immediately under cold running water. Once the potatoes are cold, drain off the water.
Cut the olives and capers roughly. Finely dice the red onion and parsley. Make the dressing by mixing all of the ingredients together. Mix all of the salad ingredients together and pour over the dressing. Check the seasoning and add salt and pepper to taste if needed.
