Ingredients

  • This recipe will use what is available from the Market on the day to make healthy bite-sized treats.
  • 1-2 eggs (Agreeable Nature)
  • Fresh black pepper
  • Sea salt
  • ½ cup cornflour
  • Fresh herbs -Spring Onions (Janefeild Hydroponics)
  • Za’atar (Abdal’s)
  • Mix ingredients in a large bowl and set aside.
  • 1.5 cups of seasonal Market produce can be added we used:
  • Carrots (Ettrick Gardens)
  • Broccoli (Oamaru Organics)
  • Silverbeet (Oamaru Organics)
  • Garlic (Wae Wae Permaculture)
  • For cooking
  • Olive oil (Dunford Grove) or ghee

Method

  • Method Pick the produce you are going to use and wash it
  • Evenly cut all produce (for consistent cooking)
  • Add prepped produce to the base mix and then fold it in
  • Let this rest for 20 minutes
  • Heat the oil or ghee in a heavy base fry pan
  • Create spoon sized balls and then flatten for cooking
  • Cook small amounts at a time
  • Dessert spoon sizes are perfect for treats
  • Serve with your favourite condiments from the market – recommended Tartan Sari Chutneys
